This revolutionary approach heats up the 36-inch wide cooking surface much faster and more evenly than traditional heating elements. This means the surface is quicker to recover, and that, even with its space-saving design, it can still cook more products in less time. Additionally, because the steam heats the griddle plate evenly, the griddle temperature is maintained to +/- 5°F over the entire surface, so there are no hot or cold zones. This makes the griddle easy to use and gives you remarkable product consistency.
