This revolutionary approach heats up the 48-inch wide cooking surface much faster and more evenly than traditional heating elements. This means the surface is quicker to recover, and that, even with its narrow depth and space-saving design, it can still cook more products in less time. Additionally, because the steam heats the griddle plate evenly, the griddle temperature is maintained to +/- 5°F over the entire surface, eliminating hot and cold zones. This makes the griddle easy to use and gives you remarkable product consistency.
